Would it be possible to just add an offline option for this software? I work from home currently and many clients ask me to work offline when working on their media. Love this software and have integrated it into my workflow. Would be very helpful to be able to use it in offline mode

You should be able to start SF when being online and then go offline afterwards to continue in read-only offline mode.
You may also be interested in putting up a firewall - we have a separate product that will allow SF to connect behind a firewall through a proxy server, which effectively means you can block any other traffic than SF's traffic. This is typically used by larger facilities.
